My argument is that companies don’t charge “extra” during school holidays. That’s the normal price. Instead, they offer discounts out of season.

Exactly. It's like thinking that Asda are ripping people off with Christmas pudding prices, as they can clearly lower them just after.

(that said, I'll eat Xmas pud almost any time).
